Here's a recipe for Raw Bitter Gourd Filling:
Ingredients:
- 2 medium-sized bitter gourds
- 1 cup finely chopped onions
- 1 cup grated coconut
- 2 tablespoons tamarind pulp
- 1 tablespoon jaggery (or brown sugar)
- 1 teaspoon salt (or to taste)
- 1 teaspoon red chili powder (adjust according to your spice preference)
- 1 tablespoon oil
- Fresh coriander leaves for garnish
Instructions:
1. Wash the bitter gourds thoroughly and pat them dry. Cut off the ends and slice them lengthwise. Scoop out the seeds and pith using a spoon, creating a hollow cavity. Keep the hollowed bitter gourds aside.
2. In a mixing bowl, combine the chopped onions, grated coconut, tamarind pulp, jaggery, salt, and red chili powder. Mix well until all the ingredients are evenly incorporated.
3. Heat oil in a pan over medium heat. Add the prepared filling mixture to the pan and sauté for about 5 minutes, until the onions turn translucent and the flavors meld together. Remove from heat and allow it to cool slightly.
4. Once the filling has cooled down, stuff it generously into the hollowed bitter gourds, pressing it firmly to fill the entire cavity. Repeat the process for all the bitter gourd slices.
5. Arrange the stuffed bitter gourds on a serving plate. Garnish with fresh coriander leaves for added flavor and visual appeal.
