Here's a recipe for Rui Fish Korma:


Ingredients:

- 500 grams Rui fish fillets

- 2 onions, finely chopped

- 3 tomatoes, pureed

- 2 tablespoons ginger-garlic paste

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon coriander powder

- 1 teaspoon cumin powder

- 1 teaspoon garam masala

- 1/2 cup plain yogurt

- 1/4 cup cashew nut paste

- 1/4 cup coconut milk

- 2 tablespoons ghee or cooking oil

- Salt to taste

- Fresh coriander leaves for garnishing


Instructions:

1. Wash the Rui fish fillets and marinate them with half of the ginger-garlic paste, turmeric powder, and salt. Let it sit for 15-20 minutes.


2. Heat ghee or cooking oil in a deep pan over medium heat. Add the chopped onions and sauté until golden brown.


3. Add the remaining ginger-garlic paste and cook for another minute until the raw aroma disappears.


4. Reduce the heat to low and add the turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala. Mix well and cook for a minute to release the flavors.


5. Add the tomato puree and cook until the oil separates from the masala. This may take around 5-7 minutes.


6. In a separate bowl, whisk together the yogurt and cashew nut paste until smooth. Add this mixture to the pan and cook for 2-3 minutes.


7. Slowly pour in the coconut milk and stir well to combine. Season with salt according to your taste.


8. Gently place the marinated fish fillets into the pan, making sure they are submerged in the sauce. Cover the pan and let it simmer on low heat for about 15-20 minutes, or until the fish is cooked through and tender.


9. Once the fish is cooked, garnish with fresh coriander leaves and remove from heat.


10. Serve the Rui Fish Korma hot with steamed rice or naan bread.
