A Delicious Recipe For Iranian Ghougni.

Here's a delicious recipe for Iranian Ghougni, a flavorful and aromatic stew commonly enjoyed in Iran:


Ingredients:

- 1 pound lamb or beef, cubed

- 1 large onion, finely chopped

- 4 cloves of garlic, minced

- 2 tablespoons vegetable oil

- 1 teaspoon turmeric powder

- 1 teaspoon ground cinnamon

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon ground cardamom

- 1/2 teaspoon ground cloves

- 1/2 teaspoon ground nutmeg

- 1 cup dried chickpeas, soaked overnight and cooked until tender

- 1 cup dried kidney beans, soaked overnight and cooked until tender

- 4 cups beef or vegetable broth

- 1 cup tomato puree

- 2 tablespoons tomato paste

- Salt and pepper to taste

- Fresh cilantro or parsley, chopped (for garnish)

- Saffron threads (optional, for garnish)


Instructions:

1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.


2. Add the cubed lamb or beef to the pot and cook until browned on all sides.


3. Add the turmeric, cinnamon, cumin, coriander, cardamom, cloves, and nutmeg to the pot. Stir well to coat the meat with the spices and cook for an additional 2-3 minutes to toast the spices.


4. Pour in the tomato puree and tomato paste. Stir well to combine with the meat and spices.


5. Add the cooked chickpeas and kidney beans to the pot, followed by the beef or vegetable broth. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low.


6. Cover the pot and let the stew simmer for about 2-3 hours, or until the meat is tender and the flavors have melded together. Stir occasionally and add more broth if needed to maintain a stew-like consistency.


7. Once the stew is ready, adjust the seasoning if necessary. If desired, garnish with fresh chopped cilantro or parsley, and a few saffron threads for an extra touch of aroma and flavor.


8. Iranian Ghougni is traditionally served with flatbread or rice. You can enjoy it with steamed basmati rice or Iranian saffron rice for a complete meal.
