Here's a recipe for Peri Peri Chicken:

Ingredients:

- 4 chicken leg quarters or 8 chicken drumsticks

- 1/4 cup olive oil

- 4 cloves garlic, minced

- 2 tablespoons lemon juice

- 2 tablespoons red wine vinegar

- 2 tablespoons paprika

- 1 tablespoon dried oregano

- 1 tablespoon chili flakes (adjust according to your spice preference)

- 1 teaspoon salt

- 1 teaspoon black pepper

- 1/2 teaspoon cayenne pepper (optional, for extra heat)

- Fresh parsley, chopped (for garnish)


Instructions:

1. In a bowl, mix together the olive oil, minced garlic, lemon juice, red wine vinegar, paprika, dried oregano, chili flakes, salt, black pepper, and cayenne pepper (if using). This will be the marinade for the chicken.


2. Place the chicken leg quarters or drumsticks in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it coats all the pieces evenly. Seal the bag or cover the dish and marinate in the refrigerator for at least 2 hours, or preferably overnight for the flavors to develop.


3. Preheat your grill or oven to medium-high heat. If using a grill, lightly oil the grates to prevent sticking.


4. Remove the chicken from the marinade and let any excess drip off. Reserve the leftover marinade for basting.


5. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. If using an oven, you can bake the chicken at 400°F (200°C) for about 25-30 minutes, or until cooked through and nicely browned.


6. While grilling or baking, baste the chicken with the reserved marinade every few minutes to keep it moist and enhance the flavor.


7. Once cooked, remove the chicken from the grill or oven and let it rest for a few minutes.


8. Garnish with freshly chopped parsley and serve hot with your choice of sides, such as grilled vegetables, rice, or a fresh salad.
