Here's a recipe for Raw Banana Kebabs:


Ingredients:

- 2 raw bananas

- 1/2 cup boiled and mashed potatoes

- 1/4 cup finely chopped onions

- 1/4 cup finely chopped bell peppers (any color)

- 2 tablespoons chopped fresh coriander (cilantro) leaves

- 1 teaspoon grated ginger

- 1 teaspoon minced garlic

- 1 teaspoon garam masala (Indian spice blend)

- 1/2 teaspoon red chili powder

- 1/2 teaspoon cumin powder

- 1/2 teaspoon chaat masala (optional)

- Salt to taste

- Oil for shallow frying


For the coating:

- 1/4 cup all-purpose flour (maida)

- 2 tablespoons rice flour

- Water as needed


Instructions:

1. Begin by boiling the raw bananas in a pot of water. Make sure the bananas are unripe and green. Cook them until they are tender but not overly soft. This usually takes around 10-12 minutes. Once done, drain the water and let the bananas cool.


2. Once the bananas are cool enough to handle, peel off the skin and grate them using a grater. Make sure to squeeze out any excess water from the grated bananas.


3. In a mixing bowl, combine the grated bananas, mashed potatoes, chopped onions, bell peppers, coriander leaves, ginger, garlic, garam masala, red chili powder, cumin powder, chaat masala (if using), and salt. Mix well until all the ingredients are evenly combined.


4. Take a small portion of the mixture and shape it into a flat kebab or patty. Repeat with the remaining mixture.


5. In a separate shallow bowl, prepare the coating mixture by combining all-purpose flour and rice flour. Add water gradually to make a thick but pourable batter.


6. Heat oil in a non-stick pan or skillet over medium heat.


7. Dip each kebab into the coating mixture, ensuring it is coated evenly on all sides. Gently place the coated kebabs onto the heated pan.


8. Cook the kebabs for 2-3 minutes on each side or until they turn golden brown and crispy.


9. Once cooked, remove the kebabs from the pan and place them on a paper towel to absorb any excess oil.


10. Serve the raw banana kebabs hot with mint chutney, tamarind chutney, or any sauce of your choice.
